We’re US citizen, traveling to Hong Kong, but would like to visit Shenzhen for a day via railway station.
Itinerary: Hongkong-Shenzhen-Hongkong-USA.

Actually, in your case you cannot use any kind of visa free transit scheme because your immediate points before and after mainland China are located in a single territory - Hong Kong. In order to be eligible for visa free transit scheme you need a third country or eligible territory and that is too complicated and irrational to think about it because of a day visit. Also, you cannot take a train from Hong Kong to Shenzhen. Your best option is to approach Lo Wu / Luohu border crossing where you will apply for a 5 day Shenzhen visa on arrival that costs just 130 CNY (paid by bank card). You will approach it by only bringing your passport and no announcement or any paperwork before the approach to the border crossing is necessary. You will do everything there. When your 5 day Shenzhen visa on arrival is granted, you will cross into Shenzhen. After your stay you are free to return back to Hong Kong by taking any border crossing and when returning you can also take a high speed train. Have a nice stay in Shenzhen.
