Anna, your both flight itineraries are eligible for 24 hour visa free transit, so we do not have to discuss about it.
It is only important that your total transit time is shorter than 24 hours counting from your first landing (in your case in Guangzhou) until your final departure (in your case from Xiamen).
Upon your landing in Guangzhou, the first thing you will do is to approach 24/144 hour visa free transit counter where you will apply for a temporary entry permit in order to be allowed to continue on your domestic section between Guangzhou and Xiamen. This application is free of any charge and here you will present your flight tickets. After your permit is granted, you will head to the immigration and head to the gate for your flight to Xiamen. In Xiamen you will cross the immigration and catch your flight to Taipei.
Your second flight itinerary will be also covered by 24 hours visa free transit, but if your layover in Shanghai is short, you do not have to perform any formality, but you will just walk from one to the other gate. It is important to mention that when you have just one stop in China, you as a Norwegian citizen are eligible for 144 hour visa free transit, so you could have made your stay in wider Shanghai area even longer and without a need to obtain any kind of visa.
