The main detail in this visa free transit scheme is that immediate points before and after your mainland Chinese transit area have to be in different geographical entities. So, the immediate points are counted and nothing else. In other words,if you travel:
UK - Hong Kong - Guangzhou - Hong Kong - UK
Your immediate points are in the same eligible entity and that is not considered to be a transit, but a return trip.
So, your last question reveals the solution.
You have to fly from Hong Kong to Gungzhou.
You have to take a ferry from Shekou port in Shenzhen and travel to Macau.
Also, you have to buy your ferry ticket online, in advance at TurboJet website, print out that ticket and have it with you. You have to take exactly that ferry you have bought your ticket for. After your arrival in Macau, you can immediately return to Hong Kong.
By the way, this is not a 6 day free visa, but 144 hour visa free transit. So, there is no visa of any kind at all.
