You can travel to Hong Kong absolutely visa free because US citizens do not need a visa to visit Hong Kong, but the segment Hong Kong - Guangzhou - Hong Kong as a day trip is not eligible for 240 hour visa free transit. For this purpose you need a visa.
I would suggest you to think about and alternative that is eligible for 240 hour visa free transit, but that one requires that your stay in mainland China is longer than 24 hours for at least for one minute and that you insert Macau as a third eligible territory. In short here is the step by step way how to do that:
1. Take a ferry from Hong Kong to Macau
2. As soon as you have entered Macau, take a ferry from Macau to Shekou port in Shenzhen
3. Take a train from Shenzhen to Guangzhou
4. Take a train from Guangzhou to Hong Kong West Kowloon station
This itinerary is eligible for 240 hour visa free transit, but there are two conditions:
1. You will have to buy your Guangzhou to Hong Kong West Kowloon station in advance, even before you depart from Hong Kong toward Macau and mainland China because you will be asked to present it in both Macau (at the time of your exit toward Shenzhen) and at the moment of your arrival in Shenzhen
2. Your stay in mainland China counting from your scheduled arrival in Shenzhen until your arrival time in Hong Kong West Kowloon station has to be longer than 24 hours.
One world of warning... If you decide to undertake this journey, you should not queue at Shekou port visa office upon your arrival by ferry into Shekou port because it is not a Shenzhen VOA that you are looking for, but 240 hour visa free transit.
