About:240-Hour Visa-Free Transit in Guangdong

Transit through Hong Kong

Hi, I have a 6 day trip to China coming up.

I have two destinations Shanghai and Guangzhou in mainland China. In this scenario, is it necessary or possible to transit through Hong Kong to enter these two cities? I am considering transiting through Hong Kong to pivot between Shanghai/Guangzhou return.
Leg 1: Canada - Shanghai (-24h) - HK - Guangzhou (72h)
Leg 2: Guangzhou - HK - Shanghai 144h -
return to Canada

Also, is train travel between Hong Kong - Guangzhou permitted with 'in transit' travel

At least two problems: 1) Hong Kong-Guangzhou-Hong Kong is not a transit to a third country/region and therefore requires a visa. 2) 144 hours transit without visa in Guangzhou requires that you arrive by air, so train travel from Hong Kong is not allowed.
