About:Beijing Capital International Airport

Traveling from Amsterdam to Beijing Capital Airport then to Guangzhou and finally to Melbourne.

Do we need a visa because of the domestic flight i China, and do we need to check out of the transit area and collect our luggage ?

Yes, you don't need a visa if you can leave China within 24 hours. If not, you need to apply for a Chinese visa before you enter China. And you need to check out of the transit and collect your luggage.
