Do I need to apply for a Chinese visa if I'm travelling from the UK to Shanghai and staying there for 3 nights, then flying to Hong Kong and staying there for 3 nights, before flying back to the UK? Thanks

You do not if Shanghai is your only stop in Mainland China.

You do not need a visa for HK and they'll only want to see your onward ticket plus hotel reservations.
