About:Transfer in T3 of Beijing Capital Airport

Seoul into Dalian on 30/01/18 and then a flight from Dalian back the UK. Which transit visa?

I am flying from Seoul into Dalian on 30/01/18 and will catch a flight from Dalian back the UK via Beijing. I was wondering whether the 72 Hr visa should be enough (French passport I hold) or the 24hr one.

If the whole of your transit time is less than 24h, then you can enjoy the 24h visa free transit. If not, you need to apply for a visa in advance, since 72h visa free transit is not available in that case.
