You need a Chinese tourist (L) visa if you plan to travel Seoul - Shanghai - Seoul. This type of itinerary is not eligible for any kind of visa free transit because your both immediate points, before and after mainland China are in the same country - South Korea. However, if you allow yourself some creativity you can use nearby countries / eligible territories to create an itinerary that would be eligible for 240 hour visa free transit. For example, an itinerary Seoul - Osaka (Japan) - Shanghai - Seoul would be eligible for this visa free transit option in the same way as it would be an itinerary Seoul - Shanghai - Taipei - Seoul.
