15 hour layover at Pudong Airport

Hi I land from Canada via China Eastern Airlines at 19:00 and would like to visit the city centre.

1) What are my options to coming back to the airport around 00:00 since the last Maglev to Pudong is 21:40?

2) My final destination is Tokyo. Do I need to claim my bags or will they be transferred?
