About:Shanghai Pudong Airport

I will be travelling from Auckland on Air New Zealand to PVG T1.

And will continue on KLM to Amsterdam from T2.
I understand I will have to take my suitcase through customs again. My stopover is 4.45 hours. Is that plenty of time and what is the best way?
What does the quarantine check entail? Are some foods forbidden? I plan to take snacks such as nuts with me; are they allowed? What about dairy foods such as cheese and yogurt? I am on a special diet so need those snacks. Thank you.

Yes, you have enough time to make this connection. Don't worry. From T1 to T2, there is a special passageway. You can walk around 15 mins.
About the quarantine check, you need to fill in the Health Quarantine Declaration Form on Entry faithfully in conformity with requirements of the inspection and quarantine authorities. Any passenger from a yellow fever-stricken area must submit a valid vaccination certificate to the inspection and quarantine officials. In addition, passengers suffering from fever, vomit, jaundice, diarrhea, acute rash, lymph gland swollen, AIDS/HIV infection, venereal disease, psychosis or open pulmonary tuberculosis are required to declare to the inspection and quarantine officials on their own.
Thus as I know, you can bring some food. But notably, drinks are not allowed to pass through when you go to the security check for the next flight. :)
