Generally, the hotel near the two major attractions are expendsive. As you will spend several days in HK, considering all, I suggest you stay in a hotel near Tsim Sha Tsui. In or near Chungking Mansion in this area, you will find many hotel with affordable price.
As for your itinerary, here is my suggestion:
June 7: Go and check in your hotel in the first place. Then go to Wong Tai Sin Temple. Kowloon Park can be followed. After that, you can visit Avenue of Stars, Ladies' Street.
June 8: It is suggested to visit Ngong Ping 360 as well as the Giant Buddha in the morning. Afterwards, Disneyland Resort is suggested to have fun, especially for your kids.
June 9: Ocean Park comes first this day. Then you can go to the peak, where you shall visit Madame Tussauds and the Peak Tower. At night, you can go down and enjoy the Symphony of Lights at Victoria Bay.
June 10: Central and Causeway Bay are recommended for you this day. You can enjoy yourselves by sightseeing the surrounding attractions and visiting shopping malls as well as tasting the local food or snacks.
