can i pay in various stores using visa/master card?

I am traveling for the first time to China. I plan to visit Beijing and also  Kunming. I have a few questions.1. Can I use Visa or Mastercard or American express in shopping malls and restaurants like KFC, McDonalds etc.2. How difficult is it to hail a taxi in the road?3. In some big shopping mall and restaurants, you can use them, but you can not use those cards in KFC and McDonalds. You'd better prepare some local cash.  Unless in the peak time, it is not difficut to catch a taxi. You can buy  a local prepaid sim card for gsm phones.
