About:Shanghai Long-Distance Bus

How can I go to Nanjing from Pudong Airport using a bullet train.

Basically im arriving at the airport at 10:25 pm.

There is no bullet train running from Shanghai to Nanjing at that time. I suggest you take the airport shuttle bus from Pudong airport to downtown Shanghai area and find a hotel to stay overnight. Then go to Shanghai Hongqiao railway station to take speed train to Nanjing the next early morning.
