Can you tell me your nationality? Then I can know whether you need a visa to Macau or not.

Italy. But my concern is about there is a checkpoint between HK and Macau because we have 2 entry for Chinese Visa, and the first we use to come in China, the second we will use to come back again in China after going out from HK. So if Macau is considered China Mainland I shoudl need another entry to entry in HK (considering I just want to visit 1 day Macau from HK).
Thank you

Macau is not considered as China Mainland. It is also a Special Adminisstrative Region, you don't need a visa to Macau.

According to your travel itinerary, Shanghai - Hong Kong - Macau - Hong Kong - Shanghai, the double-entry China visa is sufficient. A visa is not required for you to go to Hong Kong or Macau.
