Andrea, you will do the following since Colombian citizens are definitely eligible for Shenzhen 5 day visa on arrival (VOA):
1. Take a MTR East Rail Line - suburban train from the center of Hong Kong to Lo Wu border crossing.
2. At Lo Wu you will clear Hong Kong exit formalities.
3. You will shortly walk to Luohu that is mainland Chinese counterpart of Lo Wu where you will approach visa office.
4. At visa office you will take photos from self service free machines and you will fill out a visa application form. Also, you will pay 130 CNY in cash (you can obtain Chinese cash in Hong Kong) or you can also pay this fee with your bank (credit/debit) card. Here you will also present that you will have a flight from Shenzhen to Seoul.
5. When your VOA is granted you will cross the immigration where you will perform fingerprinting at automatic fingerprinting machines and also you will fill out arrival card. Here you will be asked to supply the address in China and you will just write down the name of your accommodation in Shenzhen.
6. When you cross the immigration you are free to enjoy your time on your own until your plane departure for Seoul. Here one word of warning. You have every right to fly out of Shenzhen to some foreign country, South Korea included, but your flight is not allowed to have any kind of landing within mainland China. In other words, your flight Shenzhen - Seoul is not allowed to have any kind of landing within mainland China!
The best time to arrive at Lo Wu / Luohu is before 07:30 or after 10:00 to avoid the morning rush hour. This is very easy and quite straightforward process, so you can approach to it with a complete peace of mind. I hope this helps.
