Norman, unfortunately, your itinerary is not eligible for 240 hour visa free transit. The basic rule of 240 hour visa free transit requires that the immediate points before and after mainland China are locate in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Macau). As you can see, your itinerary has both immediate points in just one eligible territory and that is Hong Kong.

In order to make your itinerary eligible, you can easily insert a nearby Macau into equation. Like this, you can travel like this:

Hong Kong - Macau - mainland China - Hong Kong

Like this your immediate points, before and after mainland China would be located in two different eligible territories - Macau and Hong Kong.

This is easy to accomplish. You will buy a train or ferry or train ticket from Guangzhou or Shenzhen to Hong Kong. After that you will take a ferry from Hong Kong to Macau and as soon as you have entered Macau, you will catch the ferry from Macau to Shenzhen. It is important to have that ticket (train or ferry) because you will be asked to present it in both Macau and upon your arrival by ferry to Shenzhen. After this you are free to explore the area you have planned and in the end, you will take exactly that train or ferry that you have bought your ticket for before your departure toward mainland China. I hope this helps and I also hope you will have a nice visit to China.
