This is not a problem at all. During her/his stay in Hong Kong a Canadian citizen can use one of three available border crossings where she/he can obtain a Shenzhen 5 day visa on arrival. They are Lo Wu / Luohu, Huanggang and Shekou. Lo Wu / Luohu is definitely the most convenient because it is easily reachable from Hong Kong city center by MTR suburban train on East Rail Line. This particular visa costs 130 CNY and the majority of overseas bank cards are accepted as well as Chinese cash and all the formalities are performed at the border crossing and nothing has to be done ahead of arrival at the border crossing. She/he can stay in Shenzhen from just a couple of hours to up to 5 days. When her/his visit is over she/he will return to Hong Kong by taking any border crossing and any mean of transport, high speed train included. I wish her/him a nice stay in Shenzhen.
