Surya Das, both of your journeys are eligible for 24 hour visa free transit and you do not need any kind of visa. During your first stop, if you are traveling on a single ticket, you will just walk from one to the other gate and you do not need to perform any formality and also you do not need to fill out any forms. You will remain all the time within the airside (transit area) of Shanghai airport. Also you will not be a subject of immigration and customs inspections. During your second journey, since you have mentioned that you will have to collect and re-check your luggage, here is what will you do. Upon landing in Shanghai these are the formalities: upon your landing in Shanghai the first thing that you will do will be to fill out arrival card. You will tick the box on the arrival card where it is written - transit. After that you will perform automatic fingerprinting. With a filled out arrival card and a fingerprinting receipt you will approach 24/240 hour visa free transit counter where you will apply for a temporary entry permit by presenting your flight tickets, filled out arrival card and fingerprinting receipt. This is all free of any charge. After a short check you will be granted a temporary entry permit and then you will cross the immigration, collect your luggage and perform new check-in and drop-off the luggage for your flight to UK. When you are done with that you will proceed toward exit immigration and to your gate for your flight to UK. Maybe you will have some time to shortly visit Shanghai by leaving your luggage at the luggage storage, but this is a detail that you will decide about. Have a nice journey.
