Tony, the first and the most important detail is that your itinerary is eligible for 24 hour visa free transit since your immediate points before and after mainland China are located in two different countries (UK and Vietnam) and you definitely do not need any kind of visa. Having a layover of about 20 hours is fine and acceptable. If you want to exit the airport in order to enjoy in the city visit and maybe having a good night rest in the hotel, this is never guaranteed because this is not an inherent passenger right, but just a discretionary decision by the immigration official on the day. In any case, your chances to be allowed to exit the airport are excellent (almost guaranteed) based on your very long layover. So, when you land in China (Guangzhou in your case), before the immigration, you will approach 24/240 hour visa free transit counter where you will apply for a temporary entry permit by presenting your flight tickets and your hotel booking confirmation (if you plan to stay in the hotel) along with a form (arrival card) that you will fill out. This application is free of any charge. After a short check you will receive a temporary entry permit and after that you will head to the immigration and finally to the city to enjoy in the visit and also to have a good night rest in the hotel.
