Jessica, you basically want to travel from Munich to Guangzhou on a return ticket and with your single entry visa for China. Also, you want to travel to Hong Kong and then return from Hong Kong to Guangzhou to catch your flight from Guangzhou to Munich. This is doable, but not in the way you have planned. The only way how you could do that is that you take a flight that will depart from Guangzhou to Hong Kong within 24 hours from your arrival in Guangzhou. Like this you can use 24 hour visa free transit in order to reach Hong Kong, but you should be very focused to tell the Chinese immigration authorities not to stamp your visa because you will be just in a transit (24 TWOV) through Guangzhou in order to arrive in Hong Kong. Like this, your visa will remain unused and you will use it when you will be returning from Hong Kong to Guangzhou by train. The alternative to this option is to arrive in Guangzhou and use your visa for the time you wanted to spend there and after that just depart to Hong Kong by train. After your stay in Hong Kong, you will have to take a plane to Guangzhou, but its scheduled arrival time will have to be within 24 hours from your departure flight from Guangzhou to Munich. In other words, you can combine your visa with 24 hour visa free transit in direction of your choice, but that will require a flight from Guangzhou to Hong Kong or Hong Kong to Guangzhou based on your choice whether you will use 24 hour visa free transit immediately upon your first arrival in Guangzhou or during your second arrival after your visit to Hong Kong. This is simply inevitable. In any case, now it will be up to you to decide what option you will apply and have in mind that it is allowed to use 24 hour visa free transit even when you travel on separate airlines and tickets and also when you have to perform self-transfer and collect your luggage. This is all doable, but you have to decide when you will use this scheme. Have a pleasant journey.
