HK - Canton - HK is a return trip, not a transit, so not eligible for 240-hour visa-free transit.

You can make it HK - Canton - Macao - HK to be eligible. But in this case, you can only enter either through Shekou Port in Shenzhen or Nansha Port in Guangzhou, both by ferry. The high speed train or metro by land port is not flexible. For the exit, you can go through any port in Guangdong. One last thing, you need to have the ticket to Macao at hand for the entry formality, or even before boarding the ferry to Canton.
