Samanta, if you are an Italian citizen, you can enter China visa free for up to 30 days, so visa free transit schemes being they 24 or 240 hour visa free transit do not apply in your case. You should just take care to fill out the arrival card (both sides) that will be dispensed on your flight to Beijing. When you land, you will proceed with your passport and your filled out to the immigration. You should just take care to return back on time for your onward flight to your final destination.
In case if your citizenship is not under those that can enter China visa free, then your transit will be covered by 24 and not 240 hour visa free transit because it is shorter than 24 hours. So, when you land in Beijing the first thing you will do is to approach 24/240 hour visa free transit counter where you will apply for a temporary entry permit by presenting your flight tickets. After a short check, you will be granted a temporary entry permit and then you will head to the immigration in order to exit the airport and to enjoy some time in Beijing on your own.
To conclude, in the first case, this will be a visa free entry into China or in another case it will be entry into China covered by 24 hour visa free transit and the temporary entry permit that will be issued at the transit counter. Have a nice stay in Beijing.
