Yes, you will be able to perform all the visa issuing formalities on time, while you are still in Canada in order to travel to China with absolute peace of mind. However, you should really start with the formalities right now. It will be all performed within a much shorter period than you think. Regular service will take about a week. So, it is not really a big deal and you can make it really easily.

There is one option, but it is rarely used and you can never predict whether you will be successful or not. This is a so called regular visa on arrival at Lo Wu / Luohu border crossing. In other words, beside those Shenzhen 5 days visas on arrival, that same border crossing (visa office) has option to issue to the visitor a 30 days regular (L) tourist visa on arrival. The price for a Canadian citizen is 406 CNY, payable by a card right at the border crossing.

In any case, I would leave that regular visa on arrival as a last resort because obtaining a visa in advance would be much wiser option. Simply speaking, if you have a Chinese tourist visa obtained in advance, you will travel absolutely relaxed and if you rely on a visa on arrival, you never really knows whether you will obtain one.

By the way, if you plan to stay at a private home, you should have in mind that you will have to register at the closest PSB (in reality a police station) within 24 hours from your arrival in China. The lady you know will assist you in the registration because of the language. Please, just do not forget to do that if you will stay in a private home. Have a nice and successful journey.
