About:Visa on Arrival

Hi there i am an australian passport holder, wanting to fly into Shenzen, and then fly out from Shenzen to Seoul - does this fall under the visa free if I stay under the 5 days

Cassie, your itinerary is valid for 144 hour visa free transit and you do not need any kind of visa. You should just have in mind that your flights to and from Shenzhen are not allowed to have any additional landing within mainland China.
