Jess, under the assumption that you are UK citizens, you are allowed to have a layover from literally just a couple of hours until 6 days, all of them absolutely visa free.
So, if your layover is shorter than 24 hours, you will be eligible for 24 hour visa free transit and if your layover is longer than 24 hours and long up to 6 days, you will be eligible for 144 hour visa free transit. It is up to you to choose the duration of your layover in Shenzhen. Also, you have to be aware that this is not a transit visa, but you will be in a status of visa free transit.
If your layover is a longer one, let's say longer than 8 hours, you can think about the visiting of city. In that case, you will approach transit counter where you will apply for a temporary entry permit to be allowed to exit the airport. This application is free of charge. You are advised to print out your flight tickets and in case if you will stay in Shenzhen area overnight, then print out also your hotel accommodation confirmation.
After your permit is granted, you will pass the immigration and proceed to the city on your own. The application is a formality and if you have those printouts with you it only takes about 10 minutes.
It is very easy to take a metro from the airport to the city center. Also, when traveling on visa free transit, being it 24 or 144 hour visa free transit, you are informed that you are allowed to stay, travel and explore the entire Guangdong province. It is logical that you will not go outside of town during a shorter layover, but if you intend to stay for a couple of days you can do that without any obstacle.
