About:72-Hour Visa-Free Transit

Shanghai airports

Do I need to fly in and out of the same Shanghai airport? And can I do the free stopover 72 hours twice, on my way in and back? (We are doing Madrid-Shanghai-Taipei, and the way back, Taipei-Beijing-Madrid)
We are one Canadian and one Spanish citizens

You can use several different airports within Shanghai transit area (like Pudong and Hongqiao), so this is perfectly eligible detail.

If you have mentioned all your stops within itinerary, you are definitely eligible for 144 hour visa free transit twice. There is no limit on the number of visa free transit you are allowed to use within certain period of time. Also, it is 144 and not 72 hours. 72 hours used to be years ago and it was replaced by 144 hours.

By the way, you are required to bother yourself with this 144 and similar stuff, but your Spanish friend does not have to because starting from December 1, Spanish citizens as well as citizens from additional 4 EU countries do not need a visa for China for up to 15 days of stay.
