This is the reason why your itinerary is not eligible for 240 hour visa free transit. The basic rule of 240 hour visa free transit strictly requires that the immediate points before and after mainland China have to be in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Macau). As you can see both of your immediate points are in just one territory - Hong Kong. The solution for your problem is to simply introduce Macau into your itinerary. When you arrive from US to Hong Kong, you can proceed to Shanghai as you have planned. Also, you are fine to go from Shanghai to Hangzhou by train. Based on the fact that you plan to visit Guangzhou and Shenzhen after Hangzhou, I would recommend you to fly from Hangzhou to Guangzhou. After Hangzhou, you can take a train to Shenzhen. Now, the main detail... In order to make your entire itinerary eligible you will take a ferry from Shenzhen (Shekou port) to Macau. It is important to understand that you will have to buy your Shekou to Macau ferry ticket even before you depart from US through TurboJet website because you will be asked for one to present it at several places. When you arrive in Macau you can take a ferry to Hong Kong immediately. Like this, your itinerary will be: US - Hong Kong - mainland China - Macau - Hong Kong - US. Perfectly eligible. In case if you need more time in mainland China than 10 days, you can fly from Hangzhou directly to Macau and Have Hong Kong - mainland China - Macau itinerary. After you have arrived in Macau, you will have an overnight and tomorrow take a ferry from Macau to Shekou, go around Shenzhen and Guangzhou and then take a train from Guangzhou or Shenzhen to Hong Kong.
