Actually, none of those plans is not possible.
When you apply and obtain a 5 days Shenzhen VOA, you are limited just to Shenzhen city limits and you are not allowed to travel outside of it. You can return to Hong Kong or Macau overland or by ferry or to fly to some other country by a nonstop fight, but without any single landing within mainland China of any kind, Guangzhou included.
Also, you cannot apply for any kind of visa free transit scheme at Shekou or any other overland border crossing. In order to obtain 144 hour visa free transit, you can only fly from Hong Kong to Guangzhou and then from either Guangzhou or Shenzhen to a third country, but you are not allowed to return to Hong Kong. Yes, you can return by ferry to Macau and after you have entered Macau, you can proceed to Hong Kong.
In other words, an itinerary:
Hong Kong (flight) - Guangzhou (you are allowed to stay and explore entire Guangdong province and then by ferry) - Macau
To take a ferry, you will have to take one from Shekou port in Shenzhen to Macau by buying a ferry ticket through TurboJet website even before your departure from Hong Kong. You will have to print it out, keep a printout with you and take exactly that ferry you have bought your ticket for.
