Visa free travel question

Can I do
San Diego to Shanghai to Seoul
Then two days later....
Seoul to Beijing to San Diego.

Yes, you are allowed to do that and your itinerary is eligible for 144 hour visa free transit in both Shanghai and Beijing.

By the way, I assume that you will depart to Shanghai and return from Beijing to some other airport and not from/to San Diego, since San Diego doesn't have any direct flight connection with China.
