About:72-Hour Visa-Free Transit

Canada -> China -> South Korea

I'm a Canadian flying from Canada to Shanghai via Guangzhou. I'm thinking to stay about 4 days in Shanghai then fly to Seoul, Korea. I'll take the same route on the way back to Canada (Seoul -> Shanghai (1 or 2 more night here) -> Guangzhou (layover) -> Canada

Guangzhou will be just a transit city and will only stay in Shanghai a few days on both way.
Do I still need a Visa?

You need a visa or different flights. Because you transit in two different areas of China, you are limited to 24 hours transit without visa.
