I wonder what is considered 3rd country after departure from China , the final destination on your itinerary or the first stop after you leave China .  For example . Prague - Amsterdam - Guangzhou . …… Return flight Guangzhou - Paris - Prague … This should work right  ? Or  Prague - Paris - Guangzhou and return Guangzhou - Amsterdam - Prague .. Thanks

The first route is Prague-Amsterdam-Guangzhou-Paris..right? It is eligible for 144-hour visa-free transit. The second route is Prague-Paris-Guangzhou-Amsterdam.. It is also eligible for 144-hour visa-free transit.
