Helene, you are definitely allowed to enjoy 144 visa free transit (not 144h visa because something like this doesn't exist) in both cases.
The first itinerary is let's say usual one, but since there is no direct (nonstop) flight from Brussels to Guangzhou, be careful that one of your landings is not within mainland China because that is not allowed for 144 hours visa free transit in Guangdong province.
The second itinerary is also fine and here you can use Guangzhou–Kowloon through train and you can also purchase the ticket through several reputable agencies that offer the tickets for this particular train where they also introduce your identity and also a passport number on e-confirmation sent to your email. Here it is not allowed to mention the names of those agencies, but you will certainly find them by careful web search. The alternative is to take a ferry and you can book the ticket in advance through CKS - Chu Kong Passenger Transport Company. Keep in mind that from Guangzhou you can use both a train and a ferry and from Shenzhen ferry only.
