No. You must have a confirmed onward flight, rail or ferry ticket in your hand when you check in at Hanoi.

Hi Judd, would instead taking the train from Dongguan to Hong Kong be an option?

Hanoi (plane) -> Guangzhou (car) -> Dongguan (train)-> Hong Kong (plane) -> Hanoi.

Chinese immigration don’t care about your ticket from Hong Kong because that’s not their jurisdiction. It’s a confirmed ticket from Guangzhou that you need.

As already mentioned by Judd, a confirmed ticket, even before your travel is indispensable to be allowed to board the plane. Anyway, this could be suitable for your travel suggestion because you can book a train ticket from Changping railway station close to Dongguan on the so called Guangzhou–Kowloon through train service and the website where you can book this ticket is Guangdong Line Schedule - MTR Intercity Through Train. With the ticket for the route from Changping to Hung Hom station in Hong Kong, you are perfectly eligible for 144 hours visa free transit in Guangdong province. You should just remember that you have to take exactly that train that you have your ticket for!
