If you don't have a hotel layover your chance is nearly zero. Even if you do immigration may still refuse you entry depending on whether it's an overnight layover. Contact the airline you are traveling with to see if a free transit hotel voucher is available.

The above information only applies if you do not already have a 10-year visa (which many Canadians have).

Chances to be allowed to exit the airport, i.e. to be granted free entry permit.

Chance for leaving the airport. Shanghai has been pretty strict on making those with stop under 24 hours stay inside the airport. Even been some cases where hotel reservation was not enough. it depends on how immigration feels that day.
