About:240-Hour Visa-Free Transit

I'm flying from Hong Kong to Shanghai where I plan to spend 3 nights before flying

to the UK. My flight to the UK is a stand by seat with the airline I work for. Will this be a problem as it's not a confirmed ticket?

It will definitely be a problem. Standby is never allowed. You need a confirmed flight or a visa.
