About:144-Hour Visa-Free Transit

Bangkok - Guangzhou - Hong Kong - Bangkok

I am German citizen living in Thailand.
Can I fly from Bangkok to Guangzhou, then travel by land to Hong Kong and fly return Hong Kong to Bangkok without having to apply for a visa?

No. You need a visa to travel by land to Hong Kong from Guangzhou (and vice versa). If you don't have a visa your only option is to travel by air, using 72 hours twov.
