I'm flying LHR-Beijing-HKG-LHR, how long do I need to stay in HK before travelling back to LHR?

It doesn't matter. If your aircraft from Beijing touches the runway in Hong Kong then it's fine. Of course, your flight from LHR to Beijing must be non-stop; it won't work if you're on Cathay Pacific, for example.
