About:240-hour Visa-free Transit in Beijing, Tianjin & Hebei

I know I can fly from USA-PEK-HK using the 144 hr entry.

Here is my question, would I be able to only spend a few days in HK before going back HK-Beijing-USA and use another few days in Beijing before flying back home? Would 3 days in HK be enough to use the 144 again so soon?

That is more than enough. Technically you could stay in Hong Kong for only 1 hour and be ok. Sometimes that includes fight with check-in agent who think you need to stay in HK destination for more than 24 hours to be considered in transit while in China. Officially as soon as you take off to Hong Kong the time resets and are eligible for another 144 how transit.
