About:72-Hour Visa-Free Transit

I'm traveling return to Taipei

I have flights booked for Taipei - China - Taipei, I don't think I qualify for the 72 hr tfv?

I'm only looking to go to Shanghai for the weekend and staying there. My question is, would I be able to get any free transit OR could I change my outgoing flight to HK then continue to board my original flight?

You need a visa. You don't qualify for visa-free transit because you're not in transit.
