USA/Atlanta to Shanghai to Hong Kong (via Delta and China Eastern) w/ 2.5-hour layover

I am traveling from Atlanta to PVG and then to Hong Kong via Delta and then China Eastern with a 2.5 hour layover. I understand these airlines are both located in the same terminal with Hong Kong considered an international departure(?), including the need to claim my baggage and check in again before my Hong Kong flight. Will 2.5 hours be sufficient to collect luggage and get to my next flight?

Yes, Hong Kong is considered an international departure and you need to claim your baggage and check in again. And 2.5 hours is enough for you to transfer. So don't worry about that.
