About:72-Hour Visa-Free Transit

Hello do I need a Visa if I am travelling from Australia to Hong Kong

for 3 nights then get a flight to Shanghai for 3 nights and then a flight to Macau for 3 nights followed by a flight from Hong Kong Back to Australia.

Yes that is fine Hong Kong > Shanghai > macau are allowed on a transit without visa. Country immediately before and after mainland China just need to be different. You can go back to Hong Kong after Macau
