Which bus will take me from Hong Kong International Airport to Hyatt Sha Tin?

You can take the bus line A41 from the airport to Sha Tin Central Bus Terminus. Then walk to west about 250m to Sha Tin Station to take the East Railway Line to Daxue Station. Getting out of the B Exit and walk to south about 300m, you will get the destination.
