HELLO, DOES AMSTERDAM GUANGZHOU HONG KONG AMSTERDAM COUNT?

Yes, if you are flying the CAN-HKG part and your AMS-CAN flight is nonstop. Also Guangzhou does not have 144-hour transit and only the 72-hour transit applies.
