About:144-Hour Visa-Free Transit

I am flying UK - Amsterdam - Shanghai - Amsterdam- UK.

Am I eligible for a 144hr Visa as Amsterdam is a 3rd country?

No. Amsterdam - Shanghai - Amsterdam is not a transit, so you are not eligible for the visa-free transit.

You could try to change one of your flights from KLM to Air France. For example, UK-AMS-PVG-CDG-UK works without a visa.
