Amsterdam-Shanghai-Paris is fine and you don't need a visa for 144 hours. The other flights in your itinerary aren't relevant to Chinese immigration.

Thank you Rob, One more thing:
It is said:
"Passengers should hold an onward ticket with a confirmed seat and date as well as a valid visa to a third country or region. Hong Kong, Macau and Taiwan count as third regions in this case.".

I have an oward ticket but i do not have a confirmed seat number as it the check in is possible 24h before departure. Is is ok?

You don't need a seat assignment, just a confirmed (not stand-by) ticket.
