72 hour transit visa? Canada, Bejing, Vietnam

Can we obtain the 72 hour free transit, flying from Canada to Beijing and then onto Vietnam?
We'd like to visit Beijing on route to and from Vietnam.
Do we need to have proof of where we are staying the two nights in Beijing also on arrival at the airport?
