144 hour valid for the trip?

U.K.-Paris (stopover)-shanghai
Shanghai- Amsterdam (stopover) - U.K.
Will they count France or UK as my point of origin? Ditto Netherlands or UK as final destination?

That's valid. In your case Paris will be the origin and Amsterdam the destination.
