On arrival in China you need your passport, confirmed onward ticket, completed landing card (usually distributed during the flight) and ideally your accommodation in China. In Cambodia you tell them you are in transit without visa and show your confirmed onward ticket. If the agent checks on their computer, make sure they put Vietnam (not China) as your destination and China as your transit, otherwise they won't see the 72 hour rule.
