We are Canadians who will be taking a cruise starting in Tokyo and touching on various ports in Japan and South Korea before ending in Shanghai.  We would like to spend a few days in Shanghai before returning to Canada. Does this qualify us for the visa-free 144-hour stay?If we cannot return directly to Canada, would it be okay if we book a flight home via the US?

Yes. You can leave to wherever you want. Doesn't have to be Canada or the U.S as long as you don't go back to the last country you come from.
